Ingredients -
4 Sweet Potatoes, quartered
1 or 2 cloves Garlic, finely chopped
3 divided tablespoons Butter
2 tablespoons Sour Cream
Salt
White Pepper
chopped Scallions (green part)
Preparation:
Cook unpeeled sweet potatoes, covered, in boiling salted water, 20 to 30 minutes or
until tender.
Meanwhile, sauté garlic in 1 tablespoon butter for 2 minutes.
When potatoes are fully cooked, drain thoroughly.
Peel and return to the pan.
Add sautéed garlic, remaining butter, sour cream, salt and pepper.
Mash thoroughly.
Transfer to serving bowl and garnish with scallions.
